Honey Lemon Herb Sparkler

A bright, lightly sweet lemon and honey soda scented with fresh rosemary, carbonated in seconds with a CO2 charger.
Makes: 1 drink · Time: 5 minutes · Chargers: 1 × MOSA CO2 charger
Ingredients
- 30 ml freshly squeezed lemon juice
- 15 ml runny honey (to taste)
- 150 ml cold filtered water
- 1 small sprig fresh rosemary or thyme
- Ice cubes
- Lemon slices and an extra herb sprig, to garnish
Method
- Stir the lemon juice, honey and water together until the honey has fully dissolved.
- Add the rosemary and bruise it lightly with the back of a spoon to release its aroma, without crushing it to pieces.
- Strain the mixture into your soda siphon or soda maker, close it and charge with one CO2 charger.
- Shake gently a few times, then leave to rest for a minute so the bubbles settle.
- Pour over ice and garnish with lemon slices and fresh herbs.
Tip
The colder the liquid, the more CO2 it holds. Chill the mix in the fridge before charging for a livelier fizz.
Safety: use only food-grade CO2 chargers made for soda siphons, never overfill the bottle, and release the pressure before opening.
