Festive Sparkling Cranberry & Rosemary Spritz

An alcohol-free Christmas spritz made fizzy in a soda siphon, topped with a cloud of lightly sweetened whipped cream.

Makes: 6 glasses · Time: 15 minutes · Chargers: 1 × CO2 charger for the soda, 1 × 8g N2O charger for the cream

Ingredients

  • 600 ml cranberry juice, chilled
  • 400 ml cold water
  • Juice of 1 orange
  • 2 sprigs rosemary, plus extra to garnish
  • For the topping: 250 ml double cream, 1 tbsp icing sugar, ½ tsp vanilla

Method

  1. Mix the cranberry juice, water and orange juice. Bruise the rosemary, add it and chill for 30 minutes, then remove the sprigs.
  2. Pour into a 1 L soda siphon, charge with one CO2 charger, shake and chill for 10 minutes.
  3. Put the cream, icing sugar and vanilla in a cream whipper, charge with one 8g N2O charger and shake 4–5 times.
  4. Dispense the sparkling cranberry into glasses, top with a swirl of cream and garnish with rosemary.

Use CO2 for fizzy drinks and N2O for whipped cream. They are not interchangeable.
